Specialist dietitian for histamine intolerance and MCAS, supporting adults with complex food-related symptoms.

I’m Nichola Williams, a UK Registered Dietitian specialising in histamine intolerance (HIT), Mast Cell Activation Syndrome (MCAS), and food chemical sensitivities, including FODMAPs, salicylates, glutamates, oxalates, and food additives.

I support adults who feel they are reacting to everything they eat and are struggling with persistent digestive, skin, neurological, or fatigue-related symptoms, particularly where histamine intolerance or MCAS is suspected or diagnosed. I have over 10 years’ experience working in the NHS and now work privately online and in Nottingham, offering personalised 1:1 dietetic support.

I support people with:

Histamine intolerance (HIT)

Mast Cell Activation Syndrome (MCAS)

Food chemical sensitivities (salicylates, glutamates, additives, oxalates)

Irritable Bowel Syndrome (IBS), including the low FODMAP diet

Long COVID and post-viral gut symptoms

Chronic Fatigue Syndrome (CFS) and Myalgic Encephalomyelitis (ME)

Perimenopause and hormone-related symptom flares

Oral Allergy Syndrome / Food Pollen Allergy

Many of my clients experience overlapping symptoms such as bloating, diarrhoea, nausea, flushing, itching, brain fog, headaches, fatigue, palpitations, and food anxiety.

Alongside my clinical experience, I also have lived experience of histamine intolerance and MCAS, which gives me a practical and realistic understanding of how disruptive and confusing these conditions can be.

My approach focuses on:

Identifying histamine and food chemical triggers

Reducing symptom flares without unnecessary restriction

Supporting gut health, nervous system regulation, and hormonal factors

Building confidence around food again

I aim to move clients away from fear-based food lists and towards a sustainable, personalised plan.

My specialist training includes:

Low FODMAP diet training through Monash University

Food chemical sensitivity training at the Royal Prince Alfred Hospital (RPAH), Australia

I regularly engage in continued professional development to stay up to date with research relating to histamine intolerance, MCAS, gut health, and chronic illness.

I offer 1:1 dietetic consultations by video and support clients across the UK, as well as in Nottingham. For more information, please visit my website: The Dietary Edit.
