I’m Nichola Williams, a UK Registered Dietitian specialising in histamine intolerance (HIT), Mast Cell Activation Syndrome (MCAS), and food chemical sensitivities, including FODMAPs, salicylates, glutamates, oxalates, and food additives.
I support adults who feel they are reacting to everything they eat and are struggling with persistent digestive, skin, neurological, or fatigue-related symptoms, particularly where histamine intolerance or MCAS is suspected or diagnosed. I have over 10 years’ experience working in the NHS and now work privately online and in Nottingham, offering personalised 1:1 dietetic support.

Alongside my clinical experience, I also have lived experience of histamine intolerance and MCAS, which gives me a practical and realistic understanding of how disruptive and confusing these conditions can be.
